When you over-cook a boiled egg it will get that nasty looking gray (or green) coating on the yoke. It looks bad and It doesn’t taste very good either. If a restaurant serves me a salad with gray eggs on it, I assume the chef doesn’t know how to boil an egg.

 

Here is the best way to boil eggs:

Place your eggs in a pot. Add enough cold water to cover them. Place a lid on the pot and bring to a boil over high heat. As soon as you see three large bubbles, turn off the heat and cock the lid to vent. Leave on the burner to slowly cook for 12 minutes. No more – No less. Drain water and pour icy cold water over the eggs until they cool down. Peel-n-eat or refrigerate.

Note:  If you are using a gas stove, don’t bring to a rolling boil, where the eggs bump around in the pan. Cook them at medium heat for 12 minutes, after they come to a boil. Then drain them and add icy cold water to cool.
