Pasta with Pesto and Chicken

Bow Tie Pasta with Pesto and Chicken    

1 box whole grain bow tie pasta

1 packet of Simply Organic Pesto mix 

¼ cup olive oil

1 cup chopped cooked chicken breast

1 cup fresh baby spinach

Optional:  2 TBSP Sundried Tomato

 

Cook pasta according to directions on box. Drain pasta and then pour back into pot. Add olive oil, cooked chicken, pesto mix and stir until well coated. This is when you add the sundried tomato if you have it.  Add  fresh baby spinach and heat for about 10 minutes over medium low heat.

Note: I did not prepare the Pesto Mix according to the package. You can also follow those instructions for making a wonderful Pesto Sauce. When preparing recipes like this, I cook 3 to 4 skinless chicken breasts in the oven with a little olive oil and basil on them. I cook them for 35 to 40 minutes at 350 degrees. Let them cool enough to handle and cut each chicken breast into small bite-size pieces. Use what you need for one meal and freeze the rest in 1 or 2 cup portions, depending on the size of your family. By doing this you have the basic meat for another one of our great recipes, like Shepherds Pie, Chicken Pot Pie or Chicken Enchiladas.
