While making my Bulgur Cocoa Wheat cereal one day I noticed how the texture and consistency was rich and meaty. Why not make taco meat with Bulgur Wheat?
These amazing tacos satisfy that Meat Taco craving while giving you Fiber and Protein without the fat.
Recipe:
1 Cup Bob’s Red Mill Quick Cooking Bulgur Wheat
1 Pkg. Organic Blue Corn Taco Shells (Or regular)
1 Pkg. Organic Taco Seasoning
Lettuce
Tomato
Tofutti (Sour Cream)
Shredded Cheese (or Veggi Shreds)
** Picante – Optional
Cook 1 cup of Quick Cooking Bulgur Wheat in 2 cups of water (about 10 minutes). Add 1/2 cup water and taco seasoning. Stir well and simmer for 5 minutes. Shred lettuce and chop tomatoes. Set aside with cheese and other toppings. While Wheat/Meat is simmering, heat oven to 350 degrees and place shells on a baking sheet. Bake for just 3 to 4 minutes. Fill each shell half way with taco (wheat) and then lettuce, tomato, etc.
This recipe makes about 16 to 20 tacos.
