My new Ultimate Oatmeal Cookie recipe. Honey Walnut. It’s gluten free, low in sugar and fabulous. You can also make it with regular unbleached flour if you don’t want it gluten free.
1 cup coconut oil – melted
1 egg
1/4 cup organic brown sugar
3/4 cup local honey
Mix well in a large bowl – Heat oven to 340 (yes 340, the honey and coconut oil get very hot)
Add – 1 tsp. baking soda (I use aluminum free)
1/2 tsp salt
1 tsp vanilla
1 cup Gluten Free All Purpose Flour
3 cups Gluten Free Oatmeal (Most Oats are gluten free, but processed in plants where there is wheat)
1-1/2 cups chopped walnuts
Mix with a large spoon and drop onto cookie sheets. (makes three sheets) I use parchment paper to keep them from burning.
Bake about 8 to 10 minutes (watch for them to brown and remove when no longer glossy)
