Leftovers can be stuffed in the fridge and forgotten. I like to make recreations from mine that my family will enjoy as much as the first time around. In this case, it’s Shepherds Pie from my leftover turkey or chicken.
Here is my recipe:
Shepherds Pie
2 cups of chopped leftover turkey (or chicken)
1 cup of leftover gravy (or a jar of Heinz turkey gravy)
2 cups of mixed vegetables (or green beans, corn, peas, carrots) I keep a bag of organic mixed vegetables in my freezer at all times for recipes like this.
2 to 3 cups of mashed potatoes. (I also keep instant organic mashed potatoes on hand)
1 Cup of Shredded Cheddar Cheese.
Place vegetables and meat in a casserole dish and stir together. Pour gravy over the mixture. Spoon mashed potatoes overt he mixture and cover with cheddar cheese. Bake at 350 degrees for 25 minutes. Serves 4 to 6.
